Assistant Manager
Assistant Manager for a fine dining Restaurant
We are looking for an industry professional who will be an asset to our award winning team. This person will have to have had considerable experience in fine dining as a manager.
Knowledge of fine food and wines will be a must. Full bar beverage service knowledge is also a prerequisite for this position. We are looking for a manager who has had experience managing a dining room where the seating of the guest is a critical part of the experience. Handling special requests and overseeing a team of professional servers is part of the day to day duties.
As the assistant to the General Manager your duties will be as follows.
Manage a 35 table dining room, 30 seat bar and private party room that seats 40 guests. Greet and seat the guests. Oversee service in the dining rooms and the bar. The dining room is open for dinner every day of the year. Prior to dinner service your duties will include but will not be limited to the following tasks.
I am in the process of building a new website site that includes social media modules. This job includes the managing of the site so knowledge of social media and computer literacy is a requisite. I will continue to have a webmaster; however the new site is designed so that we can update it ourselves. Menus changes, news clips, video, reviews and all the social media information that goes with it. You will have to have a strong knowledge of how all of this works. Marketing and promoting plays an important role here.
Assist in maintaining a perpetual inventory in the bar. Keep track of glassware, china and other equipment needs. Update ever changing menus. Maintain all side-work lists and housekeeping duties of the dishwashers. Maintain employee records so that evaluations can be conducted every year. Write a manager log for ownership every night. Be an active part of the management team that includes Chef/ Owner, General Manager and Chef des Cuisine. To become an active part of our team you will bring to the table, your passion for being in this business as well as your experience and ideas. You will have the opportunity to play a major role in the continuing success of this restaurant. We have many plans for expansion in the year ahead.
While we are well established and profitable we have not yet reached our full potential. This year will see the hotel complete its room renovations which will bring us up to 52 rooms and suites. This is a great position for someone who truly wants to become part of a fine restaurant where they can be excited about going in to work every day. I also want to say that I do not ever expect anyone to work more than a five day 50 hour work week. To be the best manager in this business you must have balance in your life. The old days of working 80 hours a week have no place in my restaurant.
Five day work week.
PM shifts - 1.00 pm to 11.00pm.
AM shifts are 7.00pm to 5.00pm.
Two consecutive days off every week.
Paid vacation after one year.

We are within a few hours’ drive of all of the great parks in Arizona. Clean air and open roads with light traffic.
45 minute drive to Flagstaff which is one of the top 10 most desirable small cities in America. 3 hours to

Position - Chef de Cuisine
Job description-
Report to the owner, Executive Chef John Sharpe
Supervise daily operations for a restaurant serving breakfast lunch and dinner seven days a week.
All food and supplies ordering which includes the inventory control and costing.
All schedules for back of the house staff. You will hire and train all cooks. They will all report to you and you will do all reviews and make all recommendations to John for pay increases. You will maintain accurate written reports when appropriate. You will dismiss employees when appropriate abiding by all Arizona and Federal laws.
Work with John in contributing to the ongoing r and d creating new dishes consistent with his philosophy. The menus change weekly according to season and available local foods. You will have every opportunity to contribute to the creative process of this restaurants evolution.
Personally teach and train all cooks and dishwashers so as to maintain consistency and respect throughout the staff. Be the leader and set the example to all who work with you.
This is a working chef position where you will be required to work the line during some dinner services. I do not expect you to work more than a five day fifty hour work week. Your days off will be consecutive most of the time. There may be instances when this is not possible but for the most part you will have a straight five day work week. You will be required to keep a daily log of operations to be emailed to management and ownership. You will need to be computer literate so as to be able to communicate with management and ownership in a professional manner. We use Microsoft Office for all of our business communication. You will need to be familiar with Work and Excel programs. If you are not computer literate then please do not waste your time or mine on applying.
The Sous Chef has been here for nine years and works the dinner line as the lead for 5 nights every week. He has worked for me for the past 23 years. He is solid and reliable, but not the leader I am searching for to supervise this operation when I am not here. I do not see him leaving as he is happy in his job and well paid for what he is doing.
We have a 10 month season starting in March and going on to New Years Eve. January and February slows down a little but we still have enough business to keep us going. During this time we plan and regroup for the year ahead. We do not lay off staff during the winter. Some hours are cut back but usually we manage to keep everyone going.
Some applicants have asked me why I am looking for a chef when that is what I am. The answer is simple. I have been a chef, restaurateur for over forty years, starting as an apprentice and attending hotel school in England when I was 15. I am now 65 and have owned this business for 11 years. My wife and I are hands on owners and we love what we do as well as being proud of what we have accomplished over these past ten years. Having said that, we also would now like to step back a little and work less. The restaurant has grown every year regardless of this economy. There is a still lot of potential for growth. In order to see that happen we need to improve our management team so we can be ready for the years ahead.
My GM is looking forward to having someone here to work side by side with him on a daily basis to build this business even more and take some ownership. The future part of this position is just that. As we move forward we would like to take more of a back seat role in the daily operations and eventually retire. When and how this will come about cannot be discussed at this time as there are many ways it can happen. What we are looking for is the right person who can work with us and our GM so in the future we can all be fulfilled and rewarded for our hard work and commitment to this business venture. So there is opportunity for ownership here in your future. When and how will really depend entirely on what you are willing to do to show us you are the right person to take over an established successful restaurant for many years to come.
