Locally Raised Churro Lamb Tagine and Cous-Cous
Lean and tender shoulder and leg pieces simmered in a fragrant broth
with apricots, raisins, almonds, tomatoes, peppers and saffron. Served
as a steaming bowl finished with squash and leaf spinach. Your plate
is piled high with tricolor steamed cous-cous. Ladle the stew over
the wheat grains. Mesquite flour fry bread for dipping. This is a classic
Moroccan dish.
